I was really excited to finally receive my copy of Pailin's book. It's been on pre-order for months and I've long been a fan of her amazing cooking videos for awhile, so today was truly a great day when it finally arrived.What I was really pleased with to see immediately is that Pai did an excellent job at putting a substantial amount of information in the first few chapters of the book that go really far in explaining a lot of the foundation of Thai cooking. As you may know from her videos, she is an excellent teacher in that she communicates really clearly what she is doing, how to do it correctly, and most importantly, WHY she is doing it. (and all with a dose of charm!) Cooking isn't just assembling a bunch of ingredients in a bowl. Knowing how and when to add an ingredient and what that ingredient is contributing to the recipe in terms of flavor and texture is very important. I think that is why Pai can help you make good recipes great when you are actually preparing them.There is a lot of info on the various ingredients, from herbs to sweeteners to all the unique sauces that are used. And yes, we all wish we had a friendly Thai grocer down the street, but for most of us in N. America, that isn't common, so she gives some good tips on finding ingredients or when she believes "Educated substitutions" (good word choice) or even omissions are ok for the sake of the recipe. You should never let a lack of finding a key ingredient keep you from trying to learn these recipes, so she will help you overcome!There is also a section specifically on vegetarian and vegan dishes which is really great as that diet is quite common and Thai food lends itself really well to being easily offered in a veg variation.I see a lot of the great recipes I have already tried from her videos featured in this book, but was also pleased to see even more new ones as well as foundation recipes like curry pastes and stocks. You will see some nice mention of the region of dishes which is good, because I think that's one of the main missing pieces of information that many new to Thai food don't get at first. They don't often get to learn, that the cuisines in the North and South are dramatically different in style from each other and that curries don't just come in green or red. (see JUNGLE curry!)I am sure anyone new or familiar to Thai cooking will really love this book. One other cool feature of the book is that there are QR codes throughout it that allow you to quickly view a video on said topic right on your phone from the Hot Thai Kitchen site as you are reading! Ingenious!Something else that I have not seen before in a cooking book is a small table on each recipe page that shows a "breakdown" on the ingredients in terms of what their role is. (sauce, aromatic, flavor) This is a cool feature and, as Pai says, she wants to help you understand how the recipes are assembled so that you can mix and match your own components to start to make your own dishes! This table really helps to do that in my opinion.Enjoy the recipes, technique and beautiful images that fill this great book!

I really love this 'cookbook' because it is so much more than that. I got mine 2 days ago and I cannot put it down. It's like reading a wonderful colorful novel about the history and culture of Thailand. This book is teaching cuisine not just recipes.I have been cooking Thai food from Pailin's YouTube recipes for about 8 months and this book really rounds out the whole experience. And I might add, I make some pretty awesome Thai food now!!Thank you!!

"Hot Thai Kitchen: Demystifying Thai Cuisine" is not only beautifully designed and full of great recipes, but it is also the perfect supplement to the Hot-Thai-Kitchen.com website. The background information included in the "Understanding Thai Cuisine" section was also very beneficial. I couldn't be happier with this cookbook.

Loved this so much I got 2 more as gifts for my little Brother and best friend. Pailin's YouTube Video's got me through some tough days over 3 months in the hospital for treatment in 2015. was waiting on this book to come out. Have been cooking Thai food since 1990, took about 30 classes over a 3 year period, and while I am pretty proficient, I really liked some of her takes on dishes, as well as new ones. I also liked her opening 60 pages, which give you some of the origins and underpinnings of Thai cuisine, which I got in my classes in the back room of the Royal Thai restaurant in Newport Beach, but are good for others learning and deeper understanding of why Thai food has layers of tastes in it. Like other Asian cuisines, too many Americans get used to the way the dishes have been altered to our tastes. Pailin's book gives you the authentic way to make things, while also letting you leverage some of the pastes, sauces and ingredients that are now more readily available today. And gives you substitutions for availability, tastes and items you may need to avoid. But also tells you when to avoid those, VERY important in my eyes. And the easy Scan Codes to leap to her YouTube Video on a particular method or Recipe really makes this a great gift for your friends and family. Because while I truly love to be told I will be cooking for a big group when I visit, it is time to Pay it Forward, and this book gives you that ability, while keeping it fun and easy, even for the nieces and nephews. I really like watching her cook on YouTube, and her website has some tasty recipes, but this book was a total letdown. There's only like 20 recipes, and they're all...odd... Half the book is talking about ingredients in detail, the story of her life, and pictures of her family. I wanted a cookbook, not a biography.

There are a number of good Thai books available, but I've found no better source of inspiration and guidance than this author. Well written, easy to follow with a bit of education thrown in for fun. Almost all of the ingredients are available nationwide, so get this book, a few "tools" and try some of these dishes. Your friends and family will thank you! Start with the "Falling Water" spicy beef salad...it's incredible. Her book will show you how to see the free video to watch it being made.

Great cookbook. Would be a great value at twice the price. Especially like the QR code link on the recipe page. This allows viewing a video as the author prepares the same dish. Plus, the first section of the book has much good info about tools, spices, techniques, etc. used in Thai cooking. Love the book!

Pailin is hands down my only go-to person for authentic Thai food. I've been along time since subscriber to her YouTube site and her cookbook delivers on every level. The book is beautiful and I especially like the sections on ingredients and cooking supplies. I have made countless meals using her recipes. My Thai friends cannot believe that I actually cooked the meals. They actually want me to show them how to make these meals. Whether you are buying this book for yourself or as a gift, you cannot go wrong. I highly recommend it!

It was not hard read this book in one sitting as it soon became clear that it is one of the most important pieces of evidence of CDC malfeasance that we have seen yet. However it still seems that an agency that has been accused by one of its own top scientists, of wrongdoing and fraud against our CHILDREN is not enough for the American people to stand up and be outraged. Why is that? Whatever your stance on vaccines, the only people who DON'T want an investigation into this are the hardline pro-vaccine movement. Everyone else (reasonable parents, questioning parents, doctors, pro-science minded people and vaccine injured) should WELCOME further investigation? I mean, why not? Safety should be first. It is naïve to think that an industry which has already been embroiled in CRIMINAL charges in the US and worldwide, would be so squeaky clean when it comes to vaccines.Barry does a great job of analyzing the situation as a reasonable person. Even the foreword by RFK Jr is more damning in its depiction of the malfeasance at the CDC. Kennedy produces a scathing report of the state of this crumbling agency and the reasons why the American people should wake up. He singles out the media as being complicit in this crime against our children and the health of future generations.After reading this book, it begs the question, why do PRO vaccine hardliners ignore this blatant corruption unless they are part of the pharma paid propaganda machine? If they're not getting paid then they're being foolish (I mean, why else would you spend countless hours online to defend this multi billion dollar industry?). What is the argument AGAINST a congressional hearing? If the CDC has nothing to hide then let's subpoena them. I saw that Ms Reiss (comments below) thinks that Rep. Posey should release the documents if they are so conclusively damning but she is naïve herself or she is just so stuck on the flawed seat belt analogy that she can't see it (clicking into a seat belt cannot cause brain injury). Publishing whistleblower documents of a government agency is not an official role of his. It must be done via a congressional hearing and go through the correct channels. If people like Ms. Reiss took a step back and remember that we were once convinced by the SCIENCE, doctors and the government that smoking was GOOD for us, she would see that this is no different. The ONLY study we will accept, as reasonable people, is the study of vaccinated Vs unvaccinated which we CAN do by obtaining access to the SEED data currently being held "under lock and key" by the CDC. This study is the only one that can truly examine the health of our children post vaccination and not rely on "studies" carried out under suspicious circumstances (Verstraeten Thimerosal study, 2004 MMR study, the Danish studies etc). All of this can go away if we have new and INDEPENDENT studies. It seems that Dr. Thompson himself wants the SEED data to be given to independent bodies to study. Why is this so difficult? Well it's so difficult because we are up against a multi Billion industry and much like the reason why the multi billion dollar National Children's Study was abandoned (and never even included vaccines) - they are afraid of what they may find (or have found). This is not going away. More and more kids are being harmed each day... drip drip... but soon the tsunami will arrive at the shore. And then it's too late. All. Over. The. (vaccinated). World. Barry's book will be a watershed moment, sadly another one, where the mainstream media turned a blind eye to what's proving to be the crime of the 21st century.

Whistleblower status means they can't fire him, but it also means he has legal protection to give congressional testimony only under subpoena. I suspect the Congress is too craven and cowardly to open this vast can of worms, that the CDC itself tested the Wakefield hypothesis concerning the MMR and autism, and confirmed the hypothesis. RFK, Jr. is correct that the CDC is a cesspool of corruption (we already know that about Congress).

A great and accurate book about an amazing person and wonderful role model who achieved so much because she trusted in God.! The film- Inn of the Sixth Happiness- which is based on G. Aylward's life, is entertaining in itself, but it's not true. Hollywood puts in a love story that did not exist and strips most references to religion in order to make the film seem "palatable" to secular audiences. I highly recommend this book.

A year ago I gave up reading fiction on the advice of an old Christian writer. I have been blessed by the stories of so many unlikely missionaries. God can turn a prostitute, a nazi soldier and a house maid into His servants.This book was easy to read. The tales of her journey through Eurasia sucked me in and her testimony left me energized. I was horrified by the conditions in which she brought 100 children over the mountains but nevertheless God kept the under His wing.I left fiction and found true stories that are more exhilarating than any made up fairytale.

Wow this woman had an extraordinary life. I loved reading this book. Much of the time I was sitting on the edge of my seat. I have since bought copies for several friends and family members. Worth ever minute of my time! It is about a British woman who moved to pre war china and her efforts to be a missionary and eventually save a large group of orphaned and abandoned children. She lived through the war years and eventually left the country after the communists took over and eventually ended up living in Taiwan with several of her adopted children. Bears little resemblance to the movie "Inn of the Sixth Happiness" which is a Hollywood Version of the book.

Any one will be blessed to read this true story by Gladys Aylward on her life serving in China that she shares from 28 yrs of age till into her sixties. She was a determined young lady & overcomes many obstacles but all the time seeing the Lord's way of providing. As humble as she is it humbles the person reading this and to be grateful to God for food, clothing, and home that Gladys shares was sparse for many people & children going days without eating. She was used of God to stop the foot binding of girls in China. Search Utube to see pictures/videos of it & you will be appalled at what the foot looks like and the pain endured.

Amazing display of the grace and power of God in the life of one who was inadequate for service in the eyes of people who tried to discourage Gladys from going to China as a missionary. Her obedience to go to China alone and without the aid of a missions board was rewarded by the Lord. Not only was she known throughout northern China as one who loves, but led many people to Christ and rescued hundreds of children in the midst of war. An example of God using the weak to show His great power, grace and mercy.If you like to read missionary biographies, this is a must read! I have seen Hollywood's version of Gladys Aylward' s life in China but it doesn't compare to the real story. I would love to see this remarkable story made into a Christian movie. What faith, bravery, obedience, joy and sacrifice this small lady experienced is a great reminder that "little is much when God is in it!"

Gladys Aylward was certainly a courageous, determined, committed woman who loved God as she served Him in the country of China. Feeling God had called her to be a missionary to China, she did not let the fact that the missionary society turned her down, deter her from what she felt she was to do. She went alone. Setting off from England by transcontinental railway all the way across Europe and Russia with war going on between the Russians and Japanese was a never-to-be-forgotten adventure. Her experiences once she reached China in 1932 were also amazing. The 1958 movie, "Inn of the Sixth Happiness" starring Ingrid Bergman as Gladys Aylward was a very popular fictionalized account of Gladys' life, and her very brave feat of leading 100 children, singlehandedly on a long arduous journey to safety during the Japanese-Chinese war. The book is fairly short, but so worth your time to read it.

The true story of a woman who got herself to China as a missionary because no missionary board thought she was acceptable, or capable of learning the language. God's timing was perfect. Social change was happening in China at the time and the local government used her to inspect the feet of little girls. She was able to share Bible stories as she told the women and girls about God's protection. When the Japanese invaded She eventually brought over 100 children out of the country with little food and water having adopted several of them. She had become a Chinese national not long after arriving in China and dressed as Chinese hoping this would help her to fit in with the people.Gladys physically wore herself out. She later tried to return to China but was unable to. She did settle in Taiwan.Part of her story is told in a Hollywood movie, The Inn of Sixth Happiness. Although great liberties are taken in the movie, such as using the tall, Ingrid Bergman, as Gladys, it was an interesting movie, although Gladys didn't like it. She felt it took too many liberties. She had never kissed a man and they developed a love story in the movie. I sought out the book after having watched the movie on TV. I figured there has to be a book about this woman. I just wished there was more of her life included!

I totally enjoyed the story of a little woman that the Lord used mightily for His glory and the benefit of the Chinese Christians. May He raise up more little women who are prepared to give their lives for others. In the midst of horrendous persecution the message of the gospel is music to the ears of those whose hearts have been prepared for it. May their tribe increase in every country so there will be many around the throne of our Risen Savior.
